Easy Chipotle Salsa Recipe

Chipotle Salsa In Less Than 15 Minutes

We are busy people and I bet you are too! Our household loves chipotle salsa and it goes so well with so many things and is a great way to spice something up after the fact. For example it is awesome on tacos and roasted meats of course, but also in soup or even mixed with ketchup for fries or dipping sauce or mayo for a nice spicy aioli.

My mother in law, who is a great cook and from Mexico, taught me how to make it from scratch with fresh ingredients, which is also really delicious. However, it is hard to always have those fresh ingredients around. I am guilty of letting many a tomato go bad before getting around to making salsa.

So over the years I came up with what I call the easy cheater salsa, because it is almost all pre-cooked and comes in a can. This way you can keep cans of ingredients around and when you need them you just toss it in a pan for 5 minutes and blend it up.


Here is my cheater chipotle salsa recipe:

1 can of Chili Chipotle in Adobo Sauce

1 can of Fire Roasted Tomatoes

1 tablespoon of minced garlic

2 teaspoons of salt

2 teaspoons cooking oil

Preparation

In a pinch, you could leave the garlic out and go straight to the blender. Personally, I like the extra garlic flavor. Sautee the garlic on the oil in a pan until it is lightly brown add the whole can of tomatoes and 1/2 the can of chipotle peppers, or if you like it really spicy the whole thing. Add the salt and let it cook to a bubble for a couple of minutes. Let it cool for a minute or two and then put it in food processor or blender. We use a blender and it works great.

Super fast, probably takes 10 minutes max. You can put it in the fridge and use it for days to top whatever you wish. You could probably even freeze it and bring it out later if you wanted to.

It also makes a great marinade with the addition of orange juice or lime and letting your meat soak in it overnight.

It is a bit spicy so I wouldn’t recommend it for most young children. At this stage it tends to stay on the side as an optional addition at our house.

It is a fast and easy way to spice up any meal. Chipotle salsa is a great way to get more flavor on your food when you are eating with a toddler and miss those spicy dishes.

The best thing about it is that it doesn’t have the vinegar after taste that the pre-made store salsas have to keep them fresh. Plus, you get to say you made it, which always seems to impress people at potlucks.
