Cooking for many tastebuds can be a challenge, especially when you throw in things like having to make it gluten free! This recipe falls under the ‘deconstructed dish’ idea that everyone can modify their dish with sauce, or in some cases without, as they wish.

Gluten Free and Dairy Free (And Egg Free) Noodle Stir Fry with Peanut Sauce

Peanut Sauce Noodle Stir Fry is a great way to make a dish that all can enjoy. The sauce is naturally gluten free and with the use of gluten free noodles it is a win for all.

Here is the what you will need for four-five portions (or if you are like us 2.5 portions and left overs):

Gluten free noodles. There are several options. I was going for more of a soba noodle on this one so I went with bionaturae’s spaghetti noodle a 12 oz package which is organic and gluten free. You could also go the rice noodle route, which Thai Kitchen Gluten-Free Stir Fry Rice Noodles are a great labeled gluten free option. There are much cheaper options out there but be sure to read the labels. The rice noodles sold in for example H Mart are usually gluten free, but you must check carefully. They are a lot cheaper at H Mart. I will go into more detail on the noodle options in another post and link back to it here.

Veggies of your choice as much as you like, I chop up about 1.5 cups. I usually go with zucchini, carrots (the one “gross thing” my kid will eat), and spinach maybe so bamboo shoots or bok choy depending on my mood and what is on sale.

Protein. I used 6 chicken thighs today, but 1 lb or meat of any kind in fine. So here you can go with tofu if you are vegan, but I am not including a recipe on how to cook tofu on this page. I will do a post on baking tofu later and link back here.

You will need a wok or large pan for stir frying. If you really like spicy you can switch this out for sesame or chili oil mixed with vegetable oil.


Gluten Free Dairy Free Family Friendly Peanut Sauce Noodle Stir Fry

Ingredients

  • 3/4 cup of creamy peanut butter
  • 1/3 cup of apple cider or white wine vinegar (I used apple cider because that is what I usually have around)
  • 1/4 water
  • 1/3 tamari reduced sodium
  • 1 teaspoon of fresh grated ginger or minced ginger
  • 3 tablespoons of honey or agave nectar for a vegan dish if you are going with tofu
  • 1 1/2 teaspoons minced garlic
  • Pack of gluten free noodles, your choice. I used Bionaturae Organic Pasta, Spaghetti, Gluten Free, 12 Oz
  • 1 lbs of chicken. I used 6 chicken thighs boneless. You can use almost anything. Tofu if you are going vegan.
  • 2 tablespoons of coconut oil for stir frying.
  • Salt and Pepper to taste.
  • Veggies of you choice, I used 1 carrot and 2 zucchini equal to 1.25 lbs.
  • red pepper flakes and/or rooster sauce to taste for those who love spicy things.

Instructions

  1. First I make the sauce. The sauce is made cold and then put on the food that is hot. If you want it really hot you can heat it up, but it was fine without it as the food is coming out of a hot pan already. Props to cookieandkate.com where the origins of this sauce recipe came from. Here is how I made it to fit my family's tastebuds.
  2. You can easily mix all the ingredients together with a spoon or whisk. It has a fresh taste that I love! You can of course adjust this according to your tastes. Also if you want you can use fresh ingredients like grated ginger or chopped garlic cloves.
  3. SAUCE
  4. Mix together the peanut butter, apple cider, water, tamari, ginger, honey, and garlic.
  5. NOODLES
  6. Then start you water for your noodles with a dash of salt. Stir fry your meat first if you are making meat and then remove it and stir fry your veggies with the coconut or other oil. Add the meat back in and keep it warm. Cook your noodles and the drain them.
  7. CHICKEN
  8. I normally dice up the chicken add salt and pepper and stir fry it with a little coconut oil. You can use sesame oil if you don't have any sensitive tongues around.
  9. VEGGIES
  10. Leave some of the chicken grease in the pan and chop up your veggies and stir fry them.
  11. ASSEMBLE or NOT
  12. In my house we keep the noodles separate, but before kids I put the noodles back in the wok and stir fried them for another couple minutes. Then add the sauce on top and toss it all together. Or if you have kids like ours each person makes their bowl and then tosses their sauce in their own bowl. That way if the kid is only into butter noodles with chicken and maybe a carrot or two all is not lost, you still get to eat your tasty peanut sauce stir fry, and the other member of the family gets to toss in their chili rooster sauce and chili flakes to make their food so spicy it could burn the fur off your dog. Also, since we put the sauce on the side we had a ton of sauce left! So were able to use it for dipping other tasty things in as well.

Making this with Amazon Fresh. If you buy all the ingredients it will cost you $25.30 for the base of the recipe. It is an additional $11.71 for every recipe worth (which is about 4 servings) for Tamari, Noodles, and Chicken. If you make it more than twice you will have to buy more peanut butter which is $3.39 additional cost. Of course you probably have some of these things at home already, so this doesn’t strictly apply it is more to give you an idea of cost.

This is for 4 servings, and additional .48 cents to for agave nectar and $2.39 for sriracha sauce in the base ingredients.

Essentially once you buy that base ingredients you only have to buy the noodles, chicken, peanut butter, veggies (I calculated $2 for the veggies) you want and tamari. Honestly, the pricing on Amazon Fresh for these items is comparable to the grocery stores in my areas, some items coming up cheaper, like the noodles. However the vegetables can be more expensive and you can buy a more exact amount of meat at the butcher window. Peanut butter is another item you can find for less if you buy it in the store and if you have kids a large tub of peanut butter will almost always get used. This pricing does not reflect organic chicken or veggies. It is another $2.79 per recipe or so to make it organic. Additionally the prices do shift online and there may be a delivery charge in your area if you do not order certain dollar amounts.

If you make it 6 times it goes down to being $4.27 a serving at 4 servings per recipe. Much cheaper than eating out and not bad for a gluten free meal. This one is still on the more expensive side as most recipes come in a little under $3.00.

However, I have to say that I had a lot of peanut sauce from this recipe and so you could make more than one and freeze or use the sauce on another recipe as well.
